Hidden gem on the trail today.
 Forced myself to go hiking today because I said I was going to when I got up this morning. I waited until the temperature dropped and mostly stayed in the shade. Went 3 miles.
The trail was closed due to logging so I walked down the forest service road and found this beautiful spot.
Reflecting at the reflecting pool. Had no idea this place existed. It was definitely worth my time to hike on the rocky road which nearly caused me to trip, twist my ankles, slip and fall.

 Woke up this morning and took a walk across the road bridge from Janna's condo. It was a beautiful morning. Warm and refreshing. Would love to come back and spend some time on the water with my family.

I do like the water and the sun. A lot. They make me smile ;) It was great to get away if even for just a day.

Bento from OkiTokyo at the South Hill Mall

Spent yesterday in Puyallup after teaching my SAIL exercise class at the Morton Senior Center. Dropped the kids off at the mall then went to the YMCA to sweat and swim. I used the elliptical machine for half an hour and swam for around an hour, went shopping at Costco then picked up the kids and stopped at Winco on the way back. The wonderful bento box I ate (I saved half for Randy later) was amazing. Especially the seaweed salad. I replaced the rice with steamed vegetables.


Today's Spinach Quiche

I made up this recipe and it is delicious! The green color is rich, too rich to be anything but high-nutrient and flavorful.
Crust:
  1. 1 1/2 cups oat bran
  2. 3 TB melted butter
Mix the oat bran and melted butter together, press into pie pan and bake @ 375 degrees for 10 minutes. Set aside.

  1. 4 whole eggs
  2. 3 TB 100% Egg Whites
  3. 1/2 Cup 100% Greek Yogurt
  4. 1 TB ground turmeric
  5. 1 tsp ground pepper
  6. 4 cups spinach
Blend first 5 ingredients, slowly adding the spinach until completely blended. 
Poor into crust and bake @ 350 for 25 minutes or until fork comes out clean from center test.

My husband was the only brave on to try a piece. I helped myself to two pieces. I guess I have a good lunch and/dinner for the next few days. Great to plan ahead for the 4th of July  family reunion.
